Almonds!

Just wanted to share this article that was posted on NPR about Almonds. We are big almond consumers here at our house. I also have to play catch up with my past couple of days of recipes. I haven't forgotten, I've just been exhausted. I hope to get that done this weekend.

It's been too long!

So, it's been awhile! I had a lot of birthdays and congratulatory type festivities and kind of fell off the 'ol wagon... I'm back on! My darling husband, Brian, has been great. Unlike me, he did not fall off the wagon, he has been going paleo strong. Even for his birthday! He had a fruit salad instead of a cake. He is such a good boy! :) I envy him at times. :)

So fast forward to now...

Back on track, and I want to contribute to the blog daily if I can. Hopefully if I can't, my husband will. (hint hint)

Tonight for dinner we had some yummy grub! My very first Shephard's Pie.... EVER. I got the recipe here and it was DELISH! We used some Elk we had (also my first time eating that) so I was pleasantly surprised that it didn't taste gamey. I also LOVE the cauliflower mash that was used for the topping. I am a potato lover, so I am a tough nut to crack when it comes to finding something comparable. This was it! I was afraid since I don't care much for cauli-rice, that I wouldn't like this mash, but it was so freaking good!

Maple Cinnamon Soft Serve It was pretty good. I am finding that with these recipies that call for banana, you can really taste the banana... I have problems with banana (semi allergic; makes my mouth itch but no swelling or anything) So this will not be something I eat frequently, maybe special occasions only? I made two servings, and in my husband's serving I omitted the maple syrup per his request. And the banana really had enough sweetness to it to make the dish still.... delish. :) I will warn you... like most paleo dishes it doesn't look pretty... but it is good.


We heard that a Cross-Fit gym had opened up just a few streets down from our house. Brian went and checked it out. So, we know it's there now. He is kind of interested. I need to build up my strength before I could even think about doing such things....

Recent Recipes

So I just wanted to give you a recent run down on some recipes we have tried and what we thought about them. (I will warn you now, I am NOT a pro photographer, and I am not one of those people who gets paid to make food look beautiful. This is what it looked like when I made it.)

First up: PALEO CANDY BARS recipe

This is something we ALWAYS have in the freezer. EVERYONE in the house loves this stuff! I even made a batch for my daughters boyfriend who is not Paleo. It really does remind me of a Reeses Cup. A must make!

Second in line: PALEO BREAKFAST CASSEROLE recipe

This was pretty good. We enjoyed it and will probably make it again. Two Thumbs up from us!

Third at bat: OLIVE, GARLIC, and LEMON CHICKEN recipe

The picture they have on their website looks much better than my picture! But this was a great dish! I think I can get away with making some small changes to it, like getting olives that are already cut? I found that cutting my olives was a step that didn't really need to be preformed.

This is what we had for dinner tonight. We added a couple of things to the recipe like green peppers and spinach. Everyone except for our youngest son thought it was good. The youngest son had some Boca Chicken Patties for dinner instead. (This is not because he thought it was gross, he just can't eat red meat. It makes him sick) We will be trying this again sometime but mayby changing it up a bit. Maybe go with a more Italian feel than a Tex-Mex feel.

Cravings

So, I thought this was a good topic today, seeing as how Easter is over now. :) Did you crave anything? And if so, what? I've just started on the Paleo Journey and I have found it really difficult for me to stay away from potatoes. I desperately want to find something to replace them, yet nothing satisfies or tastes like potatoes.

How do you get over your cravings?

I read an article just yesterday that said cravings are all in your mind. But I have also been told that you crave things that your body needs. Which is correct?

Hunger

I have found that I am really hungry lately. I have been snacking on oranges this morning. Other times I usually snack on nuts. It's times like these that a good whole grain cracker sounds really REALLY good! Alas, I have none.

What do you guys eat when you are hungry in between meals?

Bump In The Road

Hello there!

Sorry I haven't posted in a day or so. I kinda got lost somewhere I think? LOL We didn't have anything amazing for dinner last night. We had our "go to" chicken breast sprinkled with Bragg Sprinkle and tried to do a little magic to a package of FROZEN Brussel Sprouts with this amazing recipe for Brussel Sprout and Bacon Medley which turned out ok, but we prefer fresh Brussel Sprouts we have found. It was just something we wanted to try to see what the difference between fresh and frozen was. And since we eat 98% of our veggies fresh, I think we have kind of become snobs. :)

Tonight I am at a loss for what to make for dinner, so I decided to take some Italian Sausage that we bought from our local farmers market a couple of weeks ago, and I am making sausage and sauce. See, I wanted to have this with some spaghetti squash, but they didn't have any when I was at the store last week (I think they may be out of season?) so, I'm going for just sausage and sauce for dinner.

I think I have hit a plateau with my weight loss. I have lost another pound, which means so far I have lost aprox. 13 pounds since the second week of March. But I'm going to keep on fighting the fight.

Where do you guys shop for your items? Online or offline, let me know! I'm looking for some places to shop for our paleo goods.

Yesterday's Meal

So, let us try this again... I accidentally closed the window out. And of course, it was at the end of my post that this happened! So, the readers digest version:

Yesterday we had Spicy Tuna Salad for dinner. It was a fresh light meal. Something great to have for a meal during the summer. I used too much lemon and not enough red pepper flakes. We live and learn, right? Next time it will be awesome! Here is what dinner looked like last night:


I also made some Almond Butter Bark that was simply AMAZING! This is what you want to eat if you have a sweet tooth. Not a lot though, it will make you sick. Just a piece or two will do ya. I call it the Paleo version of a Reese Cup. I didn't take any pictures of what I made this time around, but my next batch I will.

This and That

What do you all cook in? I was raised on cast iron. I think that is how I acquired wrist problems at such an early age!  Seriously though, we have just started using cast iron for most of our cooking and I really love it. It's a bugger seasoning them and taking care of them when you are in the habit of conventional cooking pans but in the end, I really do enjoy them.

In other news...

I made a yummy snack on accident last night. :) I had made some egg salad yesterday afternoon for lunch, but never got around to eating lunch. So I pulled it out after dinner. I put a spoon full of it on a leaf of spinach and it was delish! I thought "These would be a great appetizer!"  My 4 year old even liked it! But I told her that the egg salad was on lettuce. Sssshhhhhh..... :) I wish I would have thought to have taken a photo! Next time I suppose. :)

Hello, is there any Paleo out there?

Hey there! Thanks for stopping by our blog. This is going to be a joint effort between my husband and myself. And I am really looking forward to it.

Our family lives in Fairborn, Ohio. Not too far from many places. We have 4 children 2 dogs, a cat and a bird. My husband has been eating the Paleo way for a few years now, and I just started. I call myself "Almost Paleo" right now, because while I do eat Paleo meals for the most part, I do eat things here and there that are not so Paleo. I'm easing into this. But my husband is pretty hard core about it.

I started a blog on tumblr http://paleotime.tumblr.com/ but I decided I want something on it's own aside from all my other blogs.

So far I have lost over 10 pounds. And I have been eating Paleo for a couple of weeks.

Tonight we had a light dinner of Paleo Italian Sub Roll Up and on the side, some Roasted Asparagus and it was yummers!


We are looking for other Paleo Dieters in our area (Miami Valley). We would like to swap recipes, places where you shop to get hard to find items.  If you know of someone, tell them about our blog! :) I know it's just started but we have lots to talk about! Are you Paleo? Hope you join us!
